Beefalo Burgers

I love the taste of wild game - I've never been one to shy away from elk, moose, venison, etc.  One of my favorite burgers is a beefalo burger.  And since I cannot afford to buy REAL beefalo meat, I make my own little variation.  The key to a good beefalo burger though is to cook it over low heat, turning frequently.  And I serve mine with all the fixings, including our special burger sauce.

Beefalo Burgers

Ingredients:
1/2 lb. ground beef
1/2 lb. ground bison/buffalo
1 Tbs. rubbed sage
1 tsp. garlic powder
1/2 tsp. salt
1/4 tsp. ground pepper
Sliced cheese of your choosing
Buns
Condiments of your choosing

Directions:
1. Preheat grill on medium heat.
2. Combine beef, bison, sage, garlic powder, salt, and pepper.
3. Divide into 4 parts and make 1/4 lb. patties.
4. Place patties on preheated grill and cook for 1 minute on each side to sear.
5. Decrease heat to low and cook patties until desired - well done, medium, rare, etc. Turn frequently.
6. During last minute, if you would like cheese on your burger, place sliced cheese on patties and allow to melt.  Remove from heat and serve.
