Spinach Pie

Doesn't the title sound SO appetizing? We tried this for the first time tonight, and it was a huge hit! Jon even had seconds! I've added a few of my own alterations to the recipe. Something else I want to try in it next time are artichoke hearts. Oh so yummy!
Spinach Pie

Ingredients:
1 container (16 oz.) low fat cottage cheese
1 pkg. (10 oz.) frozen chopped spinach, thawed, well drained
1 cup shredded mozzarella cheese
4 eggs, lightly beaten
1 jar (7 oz.) roasted red peppers, well drained, chopped
1/2 cup mushrooms, chopped
1/3 cup grated parmesan cheese
1 tsp. dried oregano leaves
1 tsp. garlic powder
1 tsp. onion powder
Directions:
1. Preheat oven to 350 degrees. Grease 9 inch pie pan.
2. Mix all ingredients until well blended. Pour into pie pan.
3. Cook for 50 minutes or until center is set and edges begin to brown. Let stand for 5-10 minutes to cool.
