Key Lime Cheesecake

Here's another cheesecake recipe for ya!  This is actually my favorite cheesecake.  It is so refreshing and creamy.  Mmmmmm, I'm starting to drool on the computer a bit!  It is best served with fresh whipped cream, not cool whip.  But if you want a short cut, cool whip is fine.

Key Lime Cheesecake

Ingredients:
1 3/4 cups graham cracker crumbs

5 Tbs. butter, melted
1 Tbs. sugar
24 oz. cream cheese, softened
1 cup sugar

1 tsp. vanilla
½ cup lime juice
3 eggs

Directions:
1. Preheat the oven to 350°F.

2. Combine graham cracker crumbs, butter and 1 Tbs. sugar in a bowl. Stir with a fork, without mixing too much - keep it crumbly. Press the crumbs onto the bottom and half way up the sides of an 8" springform pan. Then, place the pan in the preheated oven and bake for about 5 minutes. Remove and set aside.
4. In large bowl combine the cream cheese, 1 cup sugar and vanilla. Mix with electric mixer until smooth. Add the lime juice and eggs and continue to beat till smooth and creamy. Once ready, pour filling into crust.
5. Place the pie in the oven and bake for 60 to 70 minutes. Remove from the oven and allow to cool until room temperature. Place in refrigerator, covered with saran wrap, to chill overnight.
6. Once chilled, remove the pan sides and cut. Serve with whipped cream.
