Quiche

Ever want something else to make besides your usual dinner? Ever have a craving for breakfast for dinner? I do all the time, only I get bored with the same old pancake, french toast, waffle ideas.  I like to cook with eggs - we eat omelets, crepes, and fried egg sandwiches all the time.  And now quiche is a part of my repertoire.  It's just a nice, light change and it's so easy you could even make this in the morning for breakfast or brunch!

Quiche

Ingredients:
1 cup sliced fresh mushrooms
1/2 onion, chopped
1 pkg. (10 oz.) frozen chopped spinach, thawed, drained
4 eggs
1/3 cup milk
1/3 cup Miracle Whip Dressing
1 cup shredded mozzarella cheese
1 frozen pie crust (9 inch), thawed

Directions:
1. Preheat oven to 375°F.
2. Cook mushrooms and onions in large nonstick skillet sprayed with cooking spray on medium-high heat 5 min. or until crisp-tender. Remove from heat; stir in spinach.
3. Beat eggs, milk and dressing in medium bowl with whisk until well blended. Add spinach mixture and cheese; pour into crust.
4. Bake 50 min. or until center is set and top is golden brown.
